Recipe: Mango Mousse

1 Tbs. Agar flakes
1 cup Apple juice
1/2 pound of Soft tofu - blanched and pressed
1 Mango
Sweet Miso
1 Cup Apple sauce
Lemon Juice

Collards - 2-3 leaves
Sesame Seeds - 1/3 cup OR Walnuts - 1 cup
Sweet Miso
Ume puree
lemon juice
1. Blanche the collards in slightly salty boiling water and jullienne.
2. Grind sesame seeds/walnuts and add some of the blanching water. Add ume puree, miso and lemon juice.
3. Toss with the collards.
4. Done!
